Figs on Whipped Goat’s Cheese and Ricotta

Figs are still in season, so why not make the most of them with this super easy but super impressive dessert? The sweet figs, creamy cheese, and nutty pistachios are a combo you’ll want to make again and again. And the Pink Mix adds that floral twist that ties it all together. Try it while figs are still in season, and thank us later! The laziest, no-cook version of this is just sliced fresh figs on top of a whipped goat’s cheese and ricotta bed (with a hint of our Pink Mix, obviously). But if you want to take it up a notch, grill those fig slices for two minutes on each side for that caramelised magic. Either way, it’s a win.

Ingredients:

  • Fresh or grilled figs, quartered
  • 100g goat’s cheese
  • 100g ricotta
  • 2 tsp LECCA Pink Mix
  • 1-2 tbsp honey or maple syrup (to taste)
  • 2 tbsp roasted pistachios, chopped

Instructions:

  1. whip the cheese mixture: In a bowl, mix the goat’s cheese and ricotta until smooth (or use a food processor, like we did). Add in the Pink Mix and your sweetener of choice, and whip until it’s light and fluffy. Taste and adjust the sweetness if needed.
  2. prep the figs: No time? No problem—just quarter the fresh figs. But if you’re feeling fancy, brush the fig halves with a bit of olive oil and grill for 2 minutes on each side to get that perfect caramelisation.
  3. plate it up: Spread the whipped cheese mixture onto a plate, making a nice base. Lay the fig quarters on top—either fresh or grilled.
  4. finishing touches: Sprinkle with chopped roasted pistachios for some crunch. You can also add a drizzle of honey or maple syrup for extra sweetness.
  5. serve and impress: Serve it as a dessert or even as a posh appetiser. Don’t forget to add a sprig of mint for garnish if you want to be *extra*.
