Mario’s Lazy Colombian Mango Salad

No cooking involved, you heard us.

Ingredients

Get that ripe mango that’s just been sitting there for the past week. Cut it into small dainty little slices or in cute little cubes. Ultimately, size doesn’t matter. Add a generous sprinkle of half a lime, if you don’t have one, or half a lemon will do.

To make this more interesting, chop half a cucumber into thin slices or cubes (as big as your mango slices) and mix it all in. Fresh, pretty and sexy. Add some chilli if you’re feeling that extra kick and some chopped mint leaves to taste.

Time to chop ¼ of red onion into tiny tiny slices or cubes and add to the mix. You don’t want the onion to be overpowering so 1/4 will do, but who are we to stop you from adding more, if you so please.

Lastly, add a tablespoon of our pink mix and stir until the mango has a gorgeous pink hue!

If you want to make this a bit more carb-y, pair it with char-grilled tacos and sauce of choice (tahini would be nice)
