Méabh's Chickpea, Celery and Apple Salad

We’re so excited to share this amazing recipe from our community member, Méabh! A talented vegan home cook, Méabh loves experimenting with new flavours. She’s shared this refreshing Orange-Spiced Fennel and Chickpea Salad using our LECCA Orange Mix, and we couldn’t be more grateful. Thanks, Méabh, for bringing your creativity to the table! 🍊

Ingredients (Serves 2):

  • 2 celery sticks, sliced
  • Fennel, thinly sliced, fronds reserved for garnish
  • 1 apple, chopped
  • Half a tin/jar of chickpeas, drained and rinsed
  • 1 orange, one half chopped and the other half juiced
  • 1 tbsp olive or rapeseed oil
  • 1 tsp apple cider vinegar
  • 1 tsp LECCA Orange Mix
  • 1 tsp toasted sesame seeds
  • Salt and pepper to taste

Instructions:

  1. Whisk the dressing: In a small bowl, whisk together the orange juice, oil, apple cider vinegar, and LECCA Orange Mix.
  2. Mix the salad: Toss the dressing through the celery, fennel, apple, chickpeas, and chopped orange. Season with salt and pepper to taste.
  3. Serve and garnish: Sprinkle with toasted sesame seeds and garnish with the reserved fennel fronds. Serve with some crusty bread for extra crunch.

Pro tip: This salad will keep in the fridge for up to 3 days, and any extra vinaigrette will keep for a week in an airtight jar.
