
Pink Chestnut Flour Pancakes
Perfect for a weekend brunch or a special breakfast treat, these pancakes are sure to impress.
Ingredients:
- 1 cup of chestnut flour
- 1 cup of water
- 1 tablespoon of olive oil
- 1 tablespoon of LECCA Pink Spice Mix
- butter to grease the pan
For the glaze:
- 1/2 cup of honey - or to taste
- 1/2 orange, squeezed
- 1/2 orange zest
- whipped cream/yoghurt (optional)
Instructions:
- mix the batter: mix the flour and water together until smooth, then add the tablespoon of olive oil. gently mix in the pink spice mix until your mixture is pink enough, so keep adding to taste.
- cook the pancakes: warm up some butter in a pan on low/medium heat, just enough to cover the surface. then pour the mixture into the pan, little by little, so you can gauge how large you want the pancakes to be.
- flip the pancakes: once the pancake is solid, flip it and cook until both sides are golden. then stack them up on a plate.
- make the glaze: while the pancakes are cooking, mix the honey, fresh orange juice, and zest. pour on top of the stack of pancakes when done.
