Pink Granola
Store-bought granola is out, homemade granola is in. And while you're at it, why not make it pink? With this recipe, not only do you get the satisfaction of creating your own breakfast staple, but you also get to enjoy a beautiful pink hue thanks to LECCA's Pink Spice Mix.
Ingredients:
- 3 cups rolled oats
- 1 cup mixed nuts (such as almonds, walnuts, and pecans), roughly chopped
- 1/2 cup seeds (such as sunflower seeds or pumpkin seeds)
- 1/2 cup dried fruit (such as cranberries, raisins, or apricots), chopped
- 1/4 cup coconut oil or olive oil
- 1/4 cup honey or maple syrup
- 2 tablespoons LECCA Pink Spice Mix
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions:
- Preheat oven: Preheat your oven to 160°C. Line a large baking sheet with parchment paper.
- Mix dry ingredients: In a large mixing bowl, combine the rolled oats, mixed nuts, seeds, and salt.
- Prep wet ingredients: In a small saucepan over low heat, melt the coconut oil (or olive oil) with honey (or maple syrup). Once melted, remove from heat and stir in the LECCA Pink Spice Mix and vanilla extract.
- Combine ingredients: Pour the wet ingredients over the dry ingredients. Mix well until all the oats and nuts are thoroughly coated.
- Bake: Spread the granola mixture evenly on the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and fragrant.
- Add dried fruit: Once baked, remove the granola from the oven and let it cool completely. Stir in the dried fruit.
- Store and serve: Transfer the granola to an airtight container. It can be stored at room temperature for up to two weeks.
Top tip: choose a mix of dried fruits to get a head start on your five-a-day and cover a wide variety of nutrients:
- Cranberries for antioxidants
- Raisins for iron
- Apricots for vitamin A
The Pink mix also adds a healthy dose of vitamin C, as well as other micronutrients from the beetroot, rose and cardamom.
