Alright, so Christmas is over, and let’s be real—none of us can afford Buns From Home anymore. But who needs that when you’ve got Buns at Home? We’re talking rose, cardamom, and pistachio vibes giving the Jus Rol cinnamon swirl kit a major glow-up. They’re easy, cheap, and taste like you spent way more effort than you actually did. Perfect for hosting friends, upgrading your brunch game, or just treating yourself because you survived January.
ingredients:
- 1 Jus Rol cinnamon swirl kit
- 200g dates, presoaked in warm water
- 2 tsp LECCA Pink Mix (plus 1 tsp for the icing)
- 1/2 tsp vanilla extract
- A splash of water
- A handful of pistachios
instructions:
- prep your filling: Toss the cinnamon filling from the Jus Rol kit (or use it for another recipe!). In a food processor, blitz the dates, 2 tsp of Pink Mix, vanilla extract, and a splash of water until smooth and spreadable.
- toast the pistachios: Roast the pistachios in a dry pan over medium heat until they smell amazing. Let them cool, then chop them finely.
- assemble your swirls: Preheat your oven to 200°C (180°C for fan ovens)/Gas Mark 6. Unroll the pastry, spread your date filling evenly, then roll it back up from the short end. Slice the roll into 6 equal pieces and place them on a lined baking tray.
- sprinkle and bake: Generously sprinkle your chopped pistachios over the swirls. Bake on the middle shelf for 10-14 minutes, or until golden and puffy.
- make it pink: Mix 1 tsp of Pink Mix with the icing sugar from the kit and 1–1 ½ tsp of water until smooth.
- finish and devour: Drizzle the pink icing over the baked swirls. Serve them warm, preferably with a coffee and a side of smug satisfaction.
